The one I am most complimented on and known for is SO simple:
One box of JIFFY cornbread mix
One box of JIFFY yellow cake mix (it's a 1 layer mix)
1 teaspoon good vanilla
Mix both boxes according to package directions, add the vanilla and bake for 45 minutes to 1 hour at 350 degrees - do a toothpick test at 45 minutes - it might not take a full hour in your oven.
This cornbread is smooth and sweet - good with ham and beans, soup, salad - it can be frosted with icing for a not-so-sweet cake!!! I love it with honey butter and just honey, or a good jam - it's really comfort food.
I have made this for all potluck occasions, visits to shut-ins and for my family - I always am requested to bring it or provide the 'recipe'.

3. Bran Muffins

1/2 c raisins
1 egg
1/2 c honey
1 c milk or water

4. Pizza Bread

This bread is so good. It makes a 1-pound loaf (that's the size of my breadmaker - it makes 2 1-pound loaves at a time).

5. Bread Machine Rolls (wheat - hamburger, hot dog or dinner rolls)

I make these rolls about twice a week, they are much better then the ones I was buying at walmart.
Makes about 8 - 12 rolls, depending on the size you want
1 cup warm water
1 egg beaten
2 cups all-purpose flour
1 cup whole wheat flour ( I use the white-wheat)
3/4 teaspoon salt
1/4 cup vegetable shortening (I use margarine)
1/4 cup sugar
1 TB bread machine yeast
poppy or sesame seeds (opt)
1/2 - 1 TB vital wheat gluten (optional)
Place all ingredients in bread pan; select Dough setting and press Start.
When dough has risen long enough, the machine will beep.
Turn off bread machine, remove bread pan, and turn out dough onto a floured counter top or cutting board.
(I press out the dough very lightly, cut out with a large floured glass)
Gently roll and shape the dough into a 12 inch rope.
If using seeds, brush a bit of milk on top of rolls and sprinkle on the seeds.
With a sharp knife, divide dough into 8 pieces for hamburger buns or 12 pieces for hot dog buns.
Grease a baking sheet. or use parchment paper, or silicone sheets.
Place on prepared baking sheet.
Cover and let rise in warm oven 10 to 15 minutes until almost doubled.
To warm oven slightly, turn oven on Warm setting for 2 minutes, then turn it off and place covered dough in oven to rise. Remove sheet from oven to preheat.
Preheat oven to 390º degrees F.
Bake 12 to 15 minutes until golden brown. Remove from oven and cool
These will keep in a plastic bag in the freezer for 3 to 4 weeks.

1 c. raisins (optional)
Beat together eggs, oil, sugar and vanilla until thick and foamy. Add zucchini and fruit. Combine all dry ingredients with nuts and raisins and add to mixture. Divide batter between two greased 9x5 loaf pans and bake one hour at 350 degrees. Cool in pans 10 minutes before cooling on wire rack.

I did not use the electric mixer as it is very stiff. Fold in the blueberries. It says to fill the muffin cups right to the top. I didn't fill them quite that much. Sprinkle with the crumb mixture. 3. To make the crumb topping: mix together the last 4 ingredients and mix with a fork ( I used my one hand to finish crumbling it.) Sprinkle over the muffins before baking. 4. Bake for 20 to 25 minutes ( I found 22 was about right) in the preheated oven or until done. It is so very easy and they freeze well, too. |

I threw this in the bread machine yesterday & it WORKED!
3 c all purpose four

2 TBL margarine or butter
1.25 c water

9. Peach Oatmeal Muffins

1 can (16 oz.) cling peach slices
2 cups whole wheat flour
¾ cup sugar
3 tsp. baking powder
1 tsp. salt
½ tsp. baking soda
½ tsp. cinnamon
¼ tsp. nutmeg
1 cup quick cooking rolled oats
2 eggs, well beaten,
1 cup milk
¼ cup cooking oil
Drain peaches, cut into small pieces and set aside. In mixing bowl, stir together flour, sugar, baking powder, salt, baking soda, cinnamon and nutmeg. Add oats and peaches. Stir to coat peaches. Combine eggs, milk, and oil. Add to flour mixture, stirring just until dry ingredients are moistened. Fill greased muffin tins about three- fourths full with batter.
Bake in 350 degree oven, 35 minutes until done. Cool in pan for 5 minutes. Remove to wire rack or serve immediately. Can be frozen and reheated to be served at a later time.
Oatmeal fruit muffins can be made ahead and frozen. Take them out of the freezer the night before, and warm briefly before serving.
10. Irish Brown Bread

If you can't get to Ireland to savor their wonderful Brown Bread,
this is the best recipe using American whole wheat flour:
1 ¾ cups all purpose flour
1 ¾ cups whole wheat flour
3 tablespoons toasted wheat bran
3 tablespoons toasted wheat germ
2 tablespoons old-fashioned oats
2 tablespoons packed dark brown sugar
1 teaspoon baking soda
½ teaspoon salt
2 tablespoons (¼ stick) chilled unsalted butter, cut into pieces
2 cups buttermilk
Preheat oven to 425 degrees F. Butter a 9x5x3-inch loaf pan. Combine first 8 ingredients in large bowl; mix well. Add butter; rub in with fingertips until mixture resembles fine meal. Stir in enough buttermilk to form soft dough. Transfer dough to prepared loaf pan.
Bake until bread is dark brown and tester inserted into center comes out clean, about 40 minutes. Turn bread out of pan and cool right side up on rack.

Mix all. Let rise 45 min. Knead. Put in greased & floured loaf pan.Let rise for 45 min until double. Bake @ 375 for 45 min. Or....put all ingredients in a bread machine. Turn on to longest cycle.

I almost feel bad posting a store-bought bread recipe, but I just don't have the talent. I sure admire you gals that do, though.
(mimi’s cyber kitchen)
1 unsliced loaf French bread
6 T. butter
1 whole head of fresh garlic, peeled and chopped fine
7 t. sesame seeds
1/4 c. parmesan cheese
1 1/2 c. sour cream
2 c. Monterey jack cheese, cut into 1" cubes
2 t. lemon pepper (opt)
2 t. parsley
2 c. chopped steamed broccoli
Cut loaf in half lengthwise. tear out soft center of bread in chunks, leaving crust intact. Put crust shells
on a foiled covered cookie sheet. Melt butter in a large skillet, stir in garlic and sesame seeds. Cook
for 1-2 minutes. Stir in torn bread chunks, and cook until golden brown and butter has been
absorbed. Remove from heat.
In a very large bowl combine sour cream, jack cheese, parmesan, parsley and lemon pepper. Stir in cooked broccoli and toasted bread (garlic bits too!). Mix well and spoon back into bread shells. Bake at 350 for 30 minutes. (I usually cover it the first 20 minutes with foil, then remove and continue uncovered 10 more minutes.)
14. Cheddar Scallion Bread

I've posted this before but so good
8 ounces sharp cheddar cheese, shredded or coarsely grated
6 ounces butter, at room temperature
4 scallions, finely chopped
2 cloves garlic, chopped
Kosher salt and freshly ground black pepper
1 (1 pound) loaf ciabatta bread, cut in half horizontally
Directions
Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F.
In a food processor, combine the cheese and butter. Process until the mixture is smooth. Add the scallions and pulse until combined. Season with salt and pepper, to taste. Spread the cheese mixture on the cut sides of the bread. Place on a baking sheet and bake for 10 to 12 minutes until golden.
Using a serrated knife, cut the bread into 1-inch thick slices and serve.

Made this yesterday. The Extreme Bargain stores have canned pumpkin...but grocery stores don't.
Maybe your garden is producing?
makes 1 loaf
2 c cooked, pureed or canned pumpkin
1/4 c oil
2 eggs
1 1/4 c white sugar
1/2 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1 1/2 c all purpose flour(I use unbleached)
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
Chopped nuts are optional, 1/4 cup walnuts or pecans
Mix wet ingredients together, then slowly add all the dry. Mix vigorously. Grease and flour a full size bread loaf pan. Pour in. Bake @ 350 for 50 minutes.

1 cup quick cooking oats

1/4 cup milk
1/2 cup chopped raisins (optional)
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan and set aside.
2. Cream together the shortening and sugar. Add eggs and vanilla, beat until fluffy.
3. Sift together the flour, oatmeal, baking soda, salt and cinnamon. Add dry ingredients alternately with bananas and milk. Mix until blended.
4. Fold in raisins and pour into prepared pan. Bake for 50 to 60 minutes; remove from oven and cover for 5 minutes.

l stick butter/margarine
quarter the biscuits...swirl around in the cinnamon sugar mixture (i usually do a cup of sugar and just dump the cin in till it's pretty dark)...
PAM A BUNDT PAM
drop the quartered/sugar covered biscuits in the pan...after two of the cans of biscuits are in it..pour half the melted margine over the top...continue with the other two cans of biscuits and then pour the rest of the melted margarine on top..
BAKE 350 for 35 minutes...
Turn on to a plate and eat it all up...it's usually a breakfast tradition for us but it's so sweet it goes great anytime!

20. Brunch Garlic Parmesan Rolls

My sister has a brunch open house at Christmas each year. One year she made these and they were literally eaten before she could get the tray to the serving table. She started out with 6 cans of biscuits (10 biscuits per tube, but I don't know if they make that size anymore) and I ended up running to the neighborhood grocery for 3 more cans. Not a one left.
1 package Hungry Jack biscuits (10 per tube)
Mix together:
1/2 c. mayonnaise
1/4 tsp. dried oregano
1/2 c. freshly grated Parmesan cheese
1/4 tsp. garlic powder (or garlic salt)
1/4 tsp. dried basil
3 green onion tops, chopped
Preheat oven to 350. Place biscuits on baking sheet and make a well in each. Fill the well with mixture and bake 13-15 minutes.

Mix together:
1/2 c. mayonnaise
1/4 tsp. dried oregano

These are the best bran muffins! Our family devours them.
I make them both with and without the nuts.

1/2 cup oil

2 1/4 cups white sugar
2 tsp baking soda

1 cup finely chopped walnuts or pecans

For glaze, combine all remaining ingredients in bowl. Mix until smooth. Drizzle over warm rolls. Makes 12.

This one is very good, and easy too.
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
No need for a mixer for this recipe. Preheat the oven to 350ºF . With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in.
Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan.
Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

1 tablespoon water ( 70-80 F)
1 large eggs
4 1/2 teaspoons vegetable oil
3 1/4 cups bread flour
1/4 cup sugar
1 1/2 teaspoons salt
2 1/4 teaspoons active dry yeast
2 tablespoons melted butter ( for dinner rolls only) (optional)
2 tablespoons shortening ( for dinner rolls only) (optional)
1. In bread machine pan, place all ingredients from flour through yeast in order as recommended by the manufacturer.
2. Select the basic bread setting.
3. Check dough after 5 minutes of mixing, if needed add 1-2T of water or flour.
4. Bake as normal.
5. For dinner rolls.
6. Mix in bread machine but use only the dough option.
7. Lightly grease a 9 x 13 baking pan (I always use a metal pan).
8. When dough is finished shape into 15 uniformly sized balls. I always grease my hands with shortening to smooth the dough out and it helps keep the dough from drying out.
9. Cover and let the rolls rise in a warm, draft free place until risen to the desired size.
10. I let them about double in size.
11. Bake in a 350° oven about 12-15 minutes until golden brown.

2 3/4 cups bread flour
1 cup whole wheat flour
1 1/4 teaspoons bread

2 tablespoons butter, melted
1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press start.
2. When dough cycle has finished, turn dough out onto a lightly floured surface and roll out 3/4 inch thick. Cut out rolls with a 3 to 4 inch diameter biscuit cutter. I made these for our supper last evening and they are super good. Everyone loved them, so I am making up a double batch for our Thanksgiving dinner. Mine made twelve large rolls and I used a large cutter. You could use an empty can if you don't have a large cutter to cut these with. I did use a bit more honey and whole wheat flour in mine and I used Red Star Rapid Rising yeast. Today I plan on using just regular bulk yeast and see how they do as I have a lot of that on hand. Be sure and butter them well on the tops after baking for a really great taste. My son in law thinks they would be great, split, buttered and put on the grill for hamburgers. I think he is right.

I use my bread machine for making bread. Recently I've turned to making Honey Whole-Wheat. It's now become the ONLY bread I make. The flavour is just incredible, and it's gotta be healthy.
I cut the recipe in half, and put the ingredients in my bread machine on Dough. Take it out, shape into 1 loaf, let it rise and bake. I might make the whole recipe, in my KA mixer, and then get 2 loaves at once.
This is from the Harvest Forum at Garden web and is Annie's recipe.
HONEY WHOLE WHEAT BREAD (for bread machine cut in half)
3 cups all purpose flour
3 cups whole wheat flour
2 pkg. active dry yeast
2 tsp. salt
1 cup milk
1 cup water
1/2 cup honey
3 Tbsp. oil
1 egg
For Bread Machine:
all I do is put the wet ingredients on the bottom, the dry on the top, and press the "dough" button. The machine does all the work.
Handmade:
In large bowl, combine 2 cups all-purpose flour, 1 cup whole wheat flour, the yeast, and salt and mix well.

Punch down dough and divide into 2 pieces. On lightly floured surface, roll or press each piece of dough to a 14x7" rectangle. Starting with shorter side, roll up tightly, pressing dough into roll with each turn. Pinch edges and ends to seal and place dough, seam-side down, into greased 9x5" bread pans, making sure short ends of bread are snugly fitted against the sides of the pans. Cover and let rise in warm place until the dough fills the corners of the pans and is double in bulk, 30-40 minutes.
Bake in preheated 375 degree oven for 35-40 minutes, until bread is golden brown. Remove from pans and cool on wire racks. I like to brush the bread with butter when it's still hot from the oven for a softer crust.

This is such a simple recipe, it is great for everyone, even beginners...
1 cup milk
2 tablespoons white sugar
1 Tablespoon package active dry yeast
1 cup warm water (110 degrees F/45 degrees C)
1/4 cup melted shortening, butter or oil
6 cups all-purpose flour
1 Tsp Salt.
1.Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in the sugar, stirring until dissolved. Let cool until lukewarm. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
2.In a large bowl, combine the milk, yeast mixture, shortening and 3 cups flour. Beat until smooth. Add salt and rest of flour, or enough to make a soft dough. Knead. Place in greased bowl, cover, and let rise.
3.Punch down. Roll out to about 1/2 inch thick. Cut rounds with biscuit cutter, drinking glass, or empty tuna can. Sprinkle waxed paper with cornmeal and set the rounds on this to rise. Dust tops of muffins with cornmeal also. Cover and let rise 1/2 hour.
4.Heat greased griddle. Cook muffins on griddle about 10 minutes on each side on medium heat. Keep baked muffins in a warm oven until all have been cooked. Allow to cool and place in plastic bags for storage. To use, split and toast.

2 eggs, room temperature
1/3 cup margarine, melted
4 cups of bread flour

Filling:
1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened
Icing:
3 oz cream cheese, softened
1/4 cup butter, softened
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
Beat together the milk, eggs, sugar vanilla.. add the yeast and let it sit for about 10 minutes or until if foams..add in th margarine or if you prefer, butter. Then begin to add in the flour a small amount at a time... Change from the paddle to the dough hook and let it "knead" for about 6 or 7 minutes on #2 setting.
Turn the dough out onto a floured surface and knead it for a few minutes by hand. Place in a lightly greased bowl, and allow to rise until double in size.. After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for about 10 minutes. In the meantime, take a small bowl, combine brown sugar and cinnamon mixture .
Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, I let mine rise overnight. Bake in a preheated oven 400º until golden brown...20 - 25 minutes..While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract. Spread the icing on warm rolls before serving.

Love this stuff!
4 c. cornmeal
1 1/2 tsp. salt
4 c. buttermilk
1 c. cracklings
2 tsp. soda
4 eggs, beaten
1/3 c. bacon drippings
Combine cornmeal, soda and salt. Stir in eggs and buttermilk. Heat bacon drippings in a 13x9x2 pan until very hot; add cracklings and drippings to batter, mixing well. Pour into hot pan. Bake at 450 degrees until golden brown.
Love this stuff!

I think jasdip has her hands full, buttering the buns....so I'll type my recipe.....until she's free....:0)
(1 lb recipe)
2 c all purpose flour
1/2 cup water
1 egg
2 Tbl butter
1 tsp salt
1.5 tsp yeast
2 Tbl sugar
2 Tbl non fat dry milk powder
Mix, knead, let rise until double(about 45 min). Roll out on floured surface into an 18" rope. Cut rope into 8-12 pieces. Roll each piece into a ball. Put one in each greased tin. Let rise until double, then bake @ 400 for 12-15 min.

This recipe is 30 years old, and the directions really didn't make sense to me. So I stated what I did that day, in the bottom of the recipe. They don't taste too sweet at all. But they are nice buns.
1/2 cup milk
3/4 cup warm water
3 tbsp melted butter
1 pkg yeast
1 1/2 tsp salt
4 tbsp sugar
1 egg, well-beaten
4 1/2 cups sifted flour (I didn't sift mine)
Mix milk, water, salt and sugar. Add yeast according to directions. Add melted butter and egg. Add flour and knead well. Shape into ball and put in covered bowl and let rise until double.
Punch down and shape into balls and let rise again.
Bake in 350 oven 15-10 minutes.
What I did today:
I put warm water and 2 tbsp sugar in a bowl and added
2 1/4 tsp yeast (1 pkg). Stirred it and let sit till risen. (10 minutes).
I warmed the milk, added the salt and other 2 tbsp sugar and stir until dissolved. Add the melted butter and the egg.
Add the yeast and the flour.
Mix and knead and follow rest of directions.

Little bundles of cheesy goodness! Perfect as an appetizer served with marinara sauce or try them with your favorite Italian entree.
Prep Time: 20 Bake Time: 20
12 Servings:
16 Rhodes™ Dinner Rolls, thawed but still cold
16 ounce block of mozzarella cheese, cut into 16 equal cubes
butter, olive oil or beaten egg
2 teaspoons garlic salt
2 teaspoons Italian seasoning
2 teaspoons oregano flakes
marinara sauce
Flatten each dinner roll into a 4-inch circle and place a cheese cube in the middle. Bring the edges together and pinch firmly to seal completely. Place seam side down on a sprayed baking sheet.
Cover with sprayed plastic wrap and let rise until double in size. In a bowl, combine garlic salt, Italian seasoning and oregano until well combined. Remove plastic wrap from rolls and brush each one with butter, olive oil, or beaten egg.
Sprinkle with seasoning mixture.
Bake at 350°F 15-20 minutes or until golden brown. Remove from oven and serve hot with warm marinara sauce.

1 c. mashed, ripe bananas (2 bananas)
3 tbsp. milk
2 (6 oz.) pkgs. strawberry muffin mix **I used Martha White 7 oz Strawberry Cheesecake muffin mix
1 c. chopped walnuts **I used pecans
Preheat oven to 375 degrees. Grease 5 x 9 inch loaf pan.
Beat eggs. Add bananas, milk, muffin mix, and walnuts. Stir just until moistened.
Pour batter into prepared loaf pan. Bake 40 to 45 minutes or until bread tests done.
Cool bread in pan for 10 minutes. Remove to wire rack to cool.
Here's trick I learned:
Let sit on wire rack for about 10 minutes, **then put it in an airtight container, on wax paper, to finish cooling.

3/4 cup granulated sugar
1/2 cup butter, cut into chunks
2 eggs, beaten
1/2 cup milk
1 tsp vanilla, rum or butterscotch flavoring
1-1/2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
Pinch of salt
1/2 cup walnuts, chopped
1/4 cup corn or maple syrup
Place raisins, sugar, butter, eggs, milk and vanilla in a large heavy-bottomed saucepan. Place over medium heat and cook, stirring frequently, until mixture is hot, slightly thickened and just beginning to bubble, about 4 to 5 minutes. Cool slightly, uncovered, in the refrigerator, while continuing with recipe.
Preheat oven to 375F (190C). Grease 12 muffin cups or coat with cooking spray. Stir flour with baking powder, baking soda and salt in a large mixing bowl. Make a well in center and pour in warm raisin mixture, stirring just until combined. Stir in nuts until evenly mixed.
Spoon batter into muffin cups. Bake in center of oven until golden and a cake tester inserted into center of a muffin comes out clean, about 15 to 17 minutes. Remove from oven and immediately pour about 1 teaspoon syrup overtop of each muffin. Cool muffins in cups for 10 minutes, then remove to a rack. Serve warm. Store muffins in a sealed bag at room temperature for up to 2 days. For longer storage, refrigerate or preferably freeze.

53. Lemony Lemon Bread

This recipe makes two loaves and freezes well, so you can enjoy one when you make it, and enjoy the other loaf at a later date. This bread takes a bit of time to prepare, and requires at least 4 fresh lemons, but it is just as good (maybe better) the next day, so feel free to make it the day before you plan to serve it
.
~ For the Lemon Cake ~
1 1/2 cups cake flour
1 1/2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
2 1/4 cups sugar
8 large eggs, at room temperature
1/4 cup grated lemon zest (from about 4 lemons)
1/4 cup fresh lemon juice
2 cups (4 sticks) unsalted butter, melted and cooled
1/2 cup sour cream, at room temperature
2 teaspoons pure vanilla extract
~ For the Lemon Syrup ~
1/3 cup fresh lemon juice
1/3 cup sugar
~ For the Lemon Glaze ~
2 cups confectioners' sugar
4-6 Tablespoons fresh lemon juice
Making the Lemon Cakes (Recipe yields two 9"x5" loaves)
Preheat oven to 350*F. Spray sides and bottom of pans with non-stick cooking spray. Line bottom of pans with parchment paper and spray the paper as well.
Sift both flours, baking powder, baking soda and salt together in a medium bowl.
Blend the sugar, eggs, lemon zest and lemon juice in the bowl of an electric mixer and mix until combined. Slowly add the melted butter, while mixing. Add sour cream and vanilla and mix until just combined. Use a rubber spatula to fold in the flour mixture, one third at a time, until all the flour is combined. Do not overmix.
Divide the batter evenly between the prepared pans. Bake in the center of the oven for 20 minutes, rotate the pans, reduce the oven temperature to 325*F and bake another 30-35 minutes, or until toothpick inserted in the center of the loaf comes out clean. Let cool in the pans for 15 minutes.
Meanwhile, make the Lemon Syrup ~
In a small saucepan over medium heat, heat the lemon juice and sugar until the sugar is completely dissolved. Once dissolved, continue to cook for 3 more minutes. Remove from heat and set aside.
Line a half sheet pan with parchment paper and invert the baked and (mostly) cooled loaves onto the pan. Use a toothpick to poke holes in the tops and sides of the loaves.
Brush the tops and sides of the loaves with the lemon syrup. Let the syrup soak into the cake and brush again. Let the cakes cool completely, at least 30 minutes.
(The soaked, but unglazed loaves will keep well, wrapped in two layers of plastic wrap and frozen, for up to 6 weeks.)
Make the Lemon Glaze ~
In a small bowl, whisk together the confectioners' sugar and 4 tablespoons of lemon juice. The mixture should be thick but pourable. If the mixture is too stiff, add up to another 2 tablespoons lemon juice (a little at a time) and whisk again. Pour the glaze over the top of each loaf and let it drip down the sides. Let the lemon glaze harden, about 15 minutes, before serving.
The glazed loaves will keep for up to 3 days, wrapped well in plastic wrap, at room temperature.

Beat eggs; add sugar and beat well. Add the mashed figs and vegetable oil. Sift together flour, soda, salt and cinnamon. Add the fig mixture alternately with the buttermilk. Beat well. Fold in chopped pecans. Bake at 350 degrees for 1 hour in greased and floured loaf pans.
Makes 2 large or 3 small loaves.
