1. Deviled Egg DipPosted by luckygardnr (My Page) on Sun, Sep 5, 10 at 3:28
This was an absolute hit when I took it for a family Christmas gathering last year! 5 large eggs 1/2 cup mayonnaise 1 tablespoons mustard 1 tablespoon white vinegar 1 tablespoon hot sauce 4 slices bacon 1/2 cup shredded cheddar cheese salt and pepper, to taste crackers or chips, for dipping 1. Put eggs in a sauce pan and cover with water. Bring to a boil over medium heat. When the water starts to boil, turn off the heat and cover for 20 minutes. Allow eggs to cool enough to peel. 2. While the eggs are cooking, fry four slices of bacon until crisp. Drain and crumble bacon into small pieces. 3. In a large bowl, mix together mayo, mustard, hot sauce, vinegar, cheese, and crumbled bacon. 4. In a small bowl, use a fork to mash the eggs into small chunks. You could also use a food processor or a potato masher. Add the eggs to the mayo and mustard mixture and stir together. Chill, if desired. 5. Serve with crackers or potato chips for dipping. |
2. Pesto Appetizer Squares
glenda_al Aug 19,2010
I've made this LOTS.
**I half the recipe and bake in a square pyrex dish
4 cups Original Bisquick® mix
1 cup milk
2 eggs
1/3 cup pesto
Marinara sauce
Heat oven to 375ºF. Grease rectangular pan, 13x9x2 inches.
Stir together all ingredients except marinara sauce. Spread in pan.
Bake 25 to 30 minutes or until golden brown. Cool slightly; cut into 2-inch squares. Serve warm with marinara sauce for dipping. ***doesn't have to be warmed marinara
Variation
Pesto Appetizer Squares are also delicious dipped in olive oil. Pour a small amount of olive oil in a saucer, and sprinkle with grated Parmesan cheese and pepper.

This ones a hit!
1 cup shredded cheddar cheese
1 8oz pkg cream cheese
1 can, 4.25oz, UNDERWOOD DEVILED HAM
2 Tbl finely chopped scallions
1 4oz can diced green chilies
*1/2 cup chopped walnuts, for rolling the cheese ball in
*Serve with crackers
It's best to have the cream cheese at room temperture before starting this. In a bowl combine all the ingredients except the walnuts. Mix well. Shape mixture into a ball. Roll the ball in the chopped nuts. Wrap in plastic wrap & chill overnight. Serve with crackers. Makes 1 cheese ball.
It looks so pretty I bring it for pot lucks. It can be left out for people to snack on during the day and I display mine under a cheese dome.

6. Hot Pepper Jelly Puffs

The posts about jalapeno jelly yesterday made me remember this recipe. It's just your basic cheese straw recipe formed in a ball, but man, oh man, are they good. (And fast.)
1/2 lb. sharp cheddar cheese, grated
6 Tbsp. (3/4 stick) cold unsalted butter, cut in small pieces
1 c. all purpose flour
1/2 c. hot pepper jelly
Comine first three ingredients in a food processor. Blend in 1 second pulses until it resembles course meal; then run until a ball forms (5-6 seconds). Put in plastic wrap and refrigrate 30 minutes. Heat oven to 400 degrees. Roll dough into 1" balls. Bake on ungreased baking sheet about 5 minutes until lightly colored. Form a depression in top of each ball with a teaspoon and fill with 1/3 tsp. jelly. Return to oven and bake another 5 minutes or until golden brown. Recipes says it makes 6 dozen, but it only made 3 dozen when I made them. I made them for a Christmas gathering and used both red and green pepper jellies.

I love this recipe-My mom used to make it for all the picnics and potlucks. It's good hot, warm and cold! You can experiment with ingredients also. I used chopped frozen spinach/garlic once that was good, just make sure there is not much liquid.
1 pkg. Pillsbury crescent roll dough
1 pkg. sliced pepperoni
4 oz. shredded Mozzarella
Open crescent roll dough and form into 4 rectangles, being sure you seal up perforations. Lay pepperoni on dough and sprinkle a little Mozzarella on top.
Roll rectangles short end to short end. Seal edges. Refrigerate until firm. Cut each roll into 6 slices. Place on greased cookie sheet. Bake 15-20 minutes at 375 degrees until golden.
You can use 1 sm. can pizza sauce for dipping if you like!

My SIL's aunt made some food for them before the baby came. She is a great cook/baker!!! Kalie froze everything and is just taking out a few things at a time. One of the things that Sheri made for the kids were ham balls! OMG I love those!!!!!! Made these last night and froze them for our company coming in on Sunday! Add mashed potatoes, corn, green salad and an apple crisp that will be made tonight and froze until Sunday. (can you tell I like to do things ahead of time!? LOL)
Prep: 15 min. Bake: 1 hour
3-1/2 pounds ground ham
1-1/2 pounds ground beef
3 eggs, beaten
2 cups milk
3 cups graham cracker crumbs
2 cans (10-3/4 ounces each) tomato soup, undiluted
3/4 cup vinegar
2-1/2 cups packed brown sugar
1 teaspoon prepared mustard
In a large bowl, combine first five ingredients. Using a 1/3 cup measure (or 2 large serving spoons), shape mixture into 2-in. balls. Place in two large shallow roasting pans. Combine all remaining ingredients; pour over balls. Bake at 325º for 1 hour, basting frequently with sauce. Yield: about 15 servings.

12. Beer Battered Avocado Wedges

It's time we had another party, Everyone! I'm right in the mood!
These are decadent and delicious. Crispy, creamy green fried goodness. Really, they're almost too good for words.
1 cup lager or ale
1 cup all p flour
1 1/2 tsp paprika
2 cloves garlic, crushed
2 avocados
oil for frying
1 cup salsa (to serve with them)
Whisk beer, flour, paprika, garlic (I added 1/2 tsp salt) until blended. Let stand at least 2 hours.
Peel avocados, cut each into 6 wedges. Dredge each wedge in batter. Deep fry until golden.
This was great with onions, too! That batter is definitely a keeper for me.
Here's a tip from a book about avocados. If they are ripe and you refrigerate them, they hold their shape better for cutting.

These would be a light, healthy pre-Thanksgiving dinner munchie. We had them before dinner at my nephew's wedding in May and they were a hit. This isn't the exact recipe, but close enough.
2 pints cherry tomatoes
1 - 1 ½ lbs fresh mozzarella, small balls
25 - 30 leaves fresh basil
3 inch wooden skewers
olive oil
salt and pepper
favorite dried herbs (I used dried Italian seasoning)
Skewer two cherry tomatoes, one mozzarella ball and fresh basil leaves in an alternating pattern. Repeat until the tomatoes and mozzarella are gone. Drizzle with olive oil. Sprinkle with salt, pepper and your favorite herbs. Makes roughly 35 - 40 skewers.
